I moved from Saint Louis, Missouri to Inman, South Carolina the end of February. It has been a great adventure. Somehow, the plans I made when I bought this property were to plant an organic garden. After harvesting its bounty, I was going to share recipes with you, so you could enjoy my success with me. Well, Mother Nature played a great trick on me and many other crop growers, as well. We had rain practically every day this summer, so much rain, that even the plants could not tolerate it. My harvest consisted of a few tomatoes, fewer green peppers, and a good number of cucumbers. So I’ll have to share with you a few recipes made from things I raised myself. The vegetables I mentioned can be easily combined to make a tasty salad. Just remember to get fresh, organic ingredients, if you want the best result for your health. My mother used to make cucumber salad. It’s really easy and I think quite tasty.
2 or 3 cucumbers (depending on the size of your family
1 medium size sweet onion
Wash the cucumbers and slice them anyway you want.
Peel the onion and cut it in half. Slice each half and add to the cucumber.
Make your own dressing:
Use a cup of organic whole milk
Add a splash of organic vinegar to the milk
Salt and pepper to taste.
Toss everything together, chill and enjoy!
If you want to add variety to this, add some sliced or quartered or diced fresh tomatoes
If you want more variety add a green pepper.
You might even add some fresh dill to give it a different flavor.

I know that cucumbers are supposed to be good for diabetics.
Tomatoes are full of vitamin C and your liver will love them.
Onions are great for your immune system.
Milk contains a lot of protein and provides your body with essential vitamins and minerals.
You must use milk that has at least 2% fat, or you won’t be able to digest it.
You can use this salad alone for a light meal or as a side for dinner.
